The Easiest Party Dessert: Cookie Ice Cream Sandwiches

We can’t all be Martha all the time.

After you’ve mailed the invitations, crafted the party decor and picked out the perfect hostess dress, it’s OK if you don’t have the energy to bake a homemade dessert for 28 people. But instead of trying to pass off a pair of frozen apple pies as “Grandma’s secret recipe” with a camouflaging sprinkling of powdered sugar, try these easy ice cream sandwiches.

Step 1: Grab two cookies.

Step 2: Lay a scoop of ice cream on top of one cookie and cover it with the other.

Step 3: Sprinkle the sides of each ice cream sandwich with a topping—or don’t.

That’s it.

It’s still as easy as picking something up at the grocery store, but it’s a little more thoughtful and creative than anything you could find in the freezer section.

And just to show you exactly how there’s no possible way to get these wrong, I made the sandwiches in this post from the most awkward amalgamation of flavors that I possibly could: Chips Ahoy Cookies made with Reese’s Peanut Butter Cups, Ben & Jerry’s Strawberry Cheesecake ice cream and a garnish of slivered almonds.

You know what? They were amazing.

It really is the easiest party dessert you could possibly make—and literally impossible to mess up.

    You may not be able to be Martha all the time, but these sure are Martha worthy! They are simply stunning and are exactly what I need to celebrate these last few Summer days! 😀

    Just discovered your blog via London Bakes. Cookie ice cream sandwiches are AMAZING! Have you ever tried making your own? Homemade cookies are awesome for this as they go all chewy and delicious when you freeze them around the ice cream. Yum!
